We've got snow!!

Woke up this morning to our first "real" snowfall of the season!! The weatherman is saying up to 6 inches before it's all said and done!!! So thankful I don't have to drive to work in it today!! I'm sitting here with a nice hot cuppa joe flavored with eggnog creamer (yummy!!) and enjoying some wedding cake cookies which are one of my favorites!






I am contemplating making some Snickerdoodle Mini Muffins a bit later today. The recipe comes from my new Gooseberry Patch cookbook I received in a secret pal Christmas swap I participated in over on the Country Sampler Magazine forum. There are so many talented and super nice people who post over there! Here's the recipe:

Snickerdoodle Mini Muffins

1 1/2 cups all purpose flour
1 cup quick cooking oats, uncooked
3/4 cup sugar, divided
1 T. baking powder
1 cup milk
1 egg, beaten
1/4 cup margarine, softened
1 t. vanilla extract
1 t. cinnamon

Combine flour, oats, 1/2 cup sugar and baking powder; mix well. In a separate bowl, combine milk, egg, margarine and vanilla; blend well and add to flour mixture. Fill greased mini muffin cups 2/3 full. Mix together cinnamon and remaining sugar; sprinkle over muffins. Bake at 400 degrees for 12 to 14 minutes.

  1. Donna,That snow scene makes me *kinda* homesick for my home territory back in N.W. Pennsylvania! We live in Oklahoma now, in which we don't have any snow as yet, but we do have the cold weather temps that could bring us some anytime it seems!! ;) We do get bursts of snow here, and a few times we do have black ice, but haven't had anything lasts real long, which I'm glad of, as I dread driving when the weather is bad out.

    Thank you for the Snickerdoodle Mini Muffin recipe!! They sound real yummy!! I will definately give them a try real soon!!

    We're supposed to get 2-5 inches today but because it's been so warm lately they say it won't stick to paved surfaces, only grassy areas.
    Those muffins sound yummy! They're perfect for a cold snowy day like this! I'll have to try a batch this afternoon. I'll let you know how my guys like them.

    I just printed out the recipe. I am going to make them for the kids for breakfast one morning this week. I am always looking for good and quick muffin recipes.

  8. Donna, your snow pic is beautiful! we got some snow on the ground here in Utah, most in the mountains though. The recipe sounds divine! I love snickerdoodles and your egg nog creamer sounds yummo!!
