Baby it's cold outside!

A big thank you to everyone who commented on my last post. I don't usually share that much personal info online, but once I started typing, I just couldn't seem to stop the flow! I am in awe that I am such an inspiration to y'all. I don't feel deserving of such inspiration, but I'm glad to know that I am not the only one out there who struggles with emotions and with eating habits. Maybe we can all inspire one another!

I woke up to about six inches of freshly fallen snow this morning and it's still snowing! Ugh! I am not a fan of winter weather at all and this year is shaping up to be just as bad as last winter as far as snow fall and cold temps are concerned. They are forecasting about four more inches for today with high temps only reaching the low 20's. Bbbbrrr!!! So, I decided to break out the brand new red crockpot I got as a Christmas gift and make a pot of Taco Soup. Yummo!!



Taco Soup

2 lb ground beef
1 large onion, chopped
1 or 2 cans pinto beans (I use two)
1 can whole kernel corn, drained
1 can stewed tomatoes, mexican style
1 can Rotel tomatoes
1 pkg taco seasoning mix (I use mild but this is just my preference)
1 pkg dry Hidden Valley Ranch dressing mix
2 1/2 cups water

Brown ground beef. Add onion and saute until onions are tender. Drain. Put in crockpot and add all other ingredients. Stir. Cook on low for about two hours.


This is so good and so easy! I usually serve it with chili cheese flavored corn chips, sour cream, and shredded cheese (monterey jack and cheddar blend is really good). To make it a bit more low calorie and diet friendly, you can omit the sour cream or use low fat, use low fat cheese or none at all, and omit the corn chips. It's really good either way and just the thing to warm you up on a cold, snowy day!

  1. COLD with lotsa new fallen snow here too Donna, I feel like I am *stuck* at home for the weekend:( That soup looks awesome, I made a big pot of potato soup yesterday and I'm ashamed to say there wasn't much left when we we done, but it sure was good;)stay warm and enjoy!

  2. I LOVE taco soup, Donna!! I make it all of the time around here...it is just a nice change from your regular ol' pot of chili. The perfect thing for a COLD day. I too put shredded sheese, sour cream and some crushed up tortilla chips on mine. YUMMO!! Hope you all stay warm...and enjoy your soup!!

  3. Taco soup sounds good. Have you ever cut flour tortillas into strips and baked them? Would be a yummy addition to your soup.
    We got about 4" and it is a brisk 16 here. But the sun is shining so you can't beat that! I'm celebrating 60 good years on God's earth today. When is your birthday?

    sound so good...I dont eat meat of any kind
    so I would have to try some turkey..

  6. yum yum yum!!!!!!! I make the same soup but I make it with chicken breasts! I think I will try yours next time with the ground beef....... It is turning cold here! Snow coming... YEAH!!!!!!!
