Fast Food Friday

Good Friday to everyone! It's been quite a week here for me. A lot going on, leaving me feeling worn out and it seems like I take one step forward and get pushed two steps back! Oh well, on a good note, the snow is melting and we are set to have a nice sunny weekend with temps in the 50's! Woohoo!!

For todays recipe, I am sharing a tried and true chicken casserole that I make quite often. It's simple, easy and delicious.



Chicken and Stuffing Casserole

4 boneless chicken breasts
1 large can (family size) cream of chicken soup
1/2 cup milk
1 small onion, diced
salt and pepper to taste
1 box Stove Top Stuffing
1 stick of butter

Boil chicken until done. Cut into bite sized pieces. Combine soup and milk together. Put chicken in casserole dish. Pour soup mixture over chicken. Add onion, salt and pepper. Gently stir everything just enough to combine it all. Top with the stuffing mix right out of the box. Cut butter into pats and put on top of stuffing. Bake at 350 degrees for about 20-25 minutes.

Well, I gotta run and finish packing the kid's lunch for school. They are on a two hour delay today, but Mom still has to be at work by 8:30 a.m. so there's no time to waste! I hope everyone has a great Friday!

I do this about once a month....but Gonna do it this way from know on.I usually cook my chicken breast in the oven,then pour my soup over the top.Cook stove top according to the box ..then mix my onion salt and pepper into stuffing.spread it over the chicken.Lay a piece of foil loosly over the top and bake at 350 degrees 25 to 30 mins.And sometimes if I have swiss cheese in the house...After I pour the soup over chicken and before I top with stuffing..I cover it with the swiss..and cook it same way.Sounds awful... but it's sooooo good that way!!! I like it better.
