Tasty Tuesday ~ Baby, it's cold outside!!

Happy Tuesday everyone! Boy, was it cold here in Virginia today! The high temp didn't get above freezing and we saw snow showers on and off all day! Seems like it's been like this for the past week or so! When it gets cold like this, I always yearn for soups and stews. As you may remember from my post a few weeks ago, I LOVE potato soup! It's probably my favorite soup, especially if it's homemade! While I love the recipe I posted then, I have discovered a new potato soup that is just awesome! And even better, it's so quick and easy! Now that's my kind of recipe!!



Cheesy Baked Potato Soup

4 large baking potatoes
2 cans cheddar cheese soup
2 2/3 cups chicken broth
1 pkg real bacon pieces or bits
garlic powder, salt, and pepper to taste
sour cream and chopped green onions for garnish

Spear potatoes several times with a fork and bake in microwave until done. Set aside to cool. Combine soup and chicken broth in pan and heat until well blended. Add bacon pieces. Chop potatoes into bite sized pieces. You can remove the skin if you want, but I left mine on. Add potatoes to soup mixture. Add garlic powder, salt and pepper to taste. Simmer for about 15-20 minutes. Serve topped with sour cream and onion pieces if desired.


I served mine with a pan of hot, buttery yeast rolls. Oh my, it was sooooo yummy! And really hit the spot on a cold winter's evening! Hubby and the kid both loved it and there wasn't any leftovers! I will definitely be making this one again.

The kid has been having some health issues on and off for the past couple of years. He's been tested for everything under the sun from heart issues to epilepsy to a brain tumor. The doctors can find nothing wrong with him. He gets extremely lightheaded and then passes out for about a minute or so. When he comes to, he has no feeling in his legs for about ten minutes and then when the feeling does return, he has a lot of pain in his upper thigh area and he says his legs feel like they are made of lead. Once this passes, he is extremely fatigued and usually has to sleep for about 20 to 30 minutes. Then he is fine. We have had him to a neurologist, heart specialist and just about every other specialist we can think of. He had one of these attacks at school yesterday and I took him to one of the doctors at the clinic where I work. She ordered a five hour glucose tolerance test for today but he didn't even get past the first blood draw before he had an attack and passed out. So the doctor has determined that he has low blood sugar. Which I'm not sure I agree with but what do I know being that I'm only the Mom, right?? His blood pressure was extremely low right after the attack reading at 90/42. They took it about 30 minutes later and it read 99/48. AND THEY SENT HIM HOME!!!!!

I'm sorry to be so long winded. I am just at my wits end with this. Something is wrong and I don't know what to do to help him. I cannot get any doctor to listen to me and the ones that do act like they care at first, soon lose interest after they run their little tests and everything comes back normal. AAARRRGGGHHH!!! If you've read this far, thanks for listening ~ sometimes you just have to get things off your chest, ya know?? Any and all prayers you guys can throw our way will be greatly appreciated.

  1. That soup sounds delicious! On your son, I can imagine how frustrated you must be. 17 yrs. ago before I was diagnosed with fibromyalgia I saw Dr. after Dr. they all ran their tests and couldn't find anything, I got to the point where I wondered if I was really having the pain! I sure hope they find the answer soon, just hang in there and I will keep you and him in my prayers for some answers SOON!

  2. I feel your frustation and the feeling of helplessness. Stay on those doctors until they find out what's going on with your son. They are missing something...everything is not coming back normal...this is not normal! Hang in there, the prayers are going up for all of you including the doctors.
    I so totally forgot how your post started out...the soup...I had to go back up and look! Sounds really good!

    heart valve not working right...Have they
    ruled that out? Your soup sounds delish.

  4. Good morning Donna, I have been wanting to make potato soup.. Your recipe sounds good and very easy.. I'll have to try it..
    Has your son's thyroid been tested.. My daughter has hypothroid and symtoms that sound like what your son is going through..
    I have found, personally, that doctors don't have the attitude that they should have nowdays.. I will keep you and your son in my prayers..

  5. Hi Donna, just came to get that potato soup recipe and was reading about your son. The low blood sugar runs in my family and for some years we didn't know what it was. Some have it worse than others and my son is bad with it like yours. My oldest son can be talking to you one minute then the next he's on the floor out cold! My oldest daughter gets to feeling dizzy before it happens with her, as does my mother & uncle. So I would definitely go with the last doctor and have them check more into it for him. Sometimes this doesn't show up till later in years, mom was in her 50's before this started showing on her. Check your family history and I'll bet you'll find where someone has had a few problems of passing out. It doesn't have to be a constant problem either, it can show for a while then be yrs before it happens again. Hope that helps ya, prayers for you & son.
